Ingredients:
1 cup softened butter
2 1/4 cups sifted flour
1/2 cup powdered sugar
2 cups sugar

4 eggs
1/3 cup fresh squeezed lemon juice
The rind of 2 lemons grated.
1 teaspoon baking powder

Directions:
Preheat
Oven to 350
Combine 1 cup of softened butter, 2 cups of sifted
flour, and 1/2 cup of powdered sugar.
Mix the ingredients together by hand until they form
into dough.
Spread
the dough into an ungreased 13 X 9 inch pan.
Bake for 15 minutes at 350 degrees.
While it’s baking, combine 4 eggs beaten, 1/3
cup fresh-squeezed lemon juice, the rind of two lemons grated, 2 cups
of sugar,
1/4 cup of flour, and 1 teaspoon of baking powder.
Blend well for a few minutes with a hand-mixer.
Pour over the cooked crust once it has cooled.
Bake for 25 minutes and top off with powdered sugar.
Cut into squares and enjoy!
